12 x bottles 2022 Long Flat White

A blend of Semillon and Chardonnay. Deepening golden straw. The primary citrus has largely given way to development — toasted almond, nougat, beeswax and lemon curd, with dried straw and a little honeysuckle sitting behind. On the palate the Semillon's acid line has folded back into the wine rather than driving it, leaving a nutty, gently waxy texture through the middle, while the Chardonnay's stonefruit has softened towards baked quince. Dry, savoury and rounded, finishing soft and long.

Drink: Now to 2028. Serve properly cold. Complementary Food: Fish and chips, prawns, chicken schnitzel, a cheese toastie.

12 x bottles 2023 Brokenback Chardonnay

Pale straw-gold. Restrained and finely drawn — grapefruit, lemon curd, white nectarine and a struck-match flicker, with barrel ferment adding cashew and a subtle creamy lees texture rather than overt oak. The palate is tight and linear, driven by fresh acidity, the fruit citrus-led and cool rather than tropical. Well-integrated French oak sits underneath, adding texture and length without weight. Crisp, precise and long.

Drink: Now to 2030. Complementary Food: Oysters, grilled snapper, scallops, chicken with lemon.

12 x bottles 2018 Arrowfield Merlot

Deep garnet, brick-edged. Fully mature and generous, with plum, black cherry and mulberry having given way to dried fig, tobacco leaf, cocoa and a little leather and cedar. The palate is soft, round and fleshy — Mudgee's warmth showing in the fruit weight, its altitude in the acid line — tannins long since resolved to velvet, finishing savoury and comfortably long. There's no urgency here. It's arrived. The mature-red experience without the mature-red price.

Drink: Now to 2028. Complementary Food: Slow-braised beef, mushroom ragù, roast pork, aged cheddar.

12 x bottles 2021 Brokenback Shiraz

Deep crimson with a garnet rim beginning to show. A classically Hunter bouquet with red and black cherry, five-spice, dried herbs and that earthy, ferrous, almost leather-and-tar note that emerges in good Pokolbin Shiraz at five years. The palate is medium-bodied and beautifully proportioned rather than powerful: bright red fruit, fine-grained tannin, a savoury undertow of cured meat and forest floor, and an acid line that keeps it fresh and drinkable. Long, gently spiced, and gaining complexity.

Drink: Now to 2036. Complementary Food: Roast lamb, duck, mushroom dishes, Peking duck pancakes.
